I am always looking for ways to incorporate vegetables into my diet and I found these waffles to be a great way to do that. It tastes like regular waffles but they are a lot healthy and vegan. You can also add more spinach and use them as bread for your sandwich. The spinach will take away some of the sweetness so you can always add more spinach if your don´t like your waffles too sweet.
You only need 4 ingredients for this recipe: oats, almond milk, spinach and banana. This is simple ingredients that you probably already have which I love about this recipe. Start by warming up an waffle iron.
Put all the ingredients in a blender and blend until it has this beautiful green color. The consistency should be like a regular waffle dough.
Add some oil to the waffle iron when it has finished heating. Add the dough and cook the waffles for about 5 minutes. Eat your waffles while they are still hot. I recommend topping the waffles of with this chia jam.

Healthy spinach waffles
Healthy, vegan and gluten free waffles made with spinach for a beautiful green color. Can be eaten as dessert or as bread for a sandwich.
Ingredients
- 1 banana
- 3 dl oats (gluten free if needed) (1.25 cup)
- 2 dl almond milk (8 ounces)
- 2 handful of spinach (4 for a sandwich waffle)
- 1 tbsp coconut oil (olive oil for sandwich waffle)
Instructions

Start by warming up a waffle iron.

Blend the banana, oats, almond milk and spinach together in a blender.

When the waffle iron is heated up, add the oil and then the dough.

Cook the waffles until they are done (about 5 minutes)

Eat your waffles while they are still warm with jam or your desired toppings. Can also be used as bread in a sandwich.
