Healthy tofu bites

Tofu. Probably one of the most discussed vegan foods out there. I feel like it is one of those foods that everyone thinks is the most disgusting thing until they learn how to use it in different types of recipes. I will admit that I too hated it in the beginning but I learned to incorporate it into different recipes and now I enjoy eating it. One of the things that tofu is great at is to be used as a substitute for eggs. I used to love making mini muffin-like omelets and I always ate them as lunch or for a snack but since I don’t eat eggs anymore I had to find another way to make them and this is where tofu comes in. The great thing about tofu is that you can make it taste like anything that you want since it dosn’t really taste like anything by itself. In this recipe, I chose to season it with garlic and spinach but you can experiment with any seasoning that you like. As you know I like to make customizable recipes to make it ideal for anyone’s taste and this one is no different. Another customizable thing about this recipe is the filling. I used bell peppers and tomatoes but you can use whatever vegetable that you like.

Healthy tofu bites

These mini tofu bites are perfect for the lunch box or for a healthy snack. They are filled with delicious veggies and are easy to customize to make them fit your flavor preference.

Ingredients

  • 1 package of Tofu
  • 1 handful of spinach
  • 1 clove of garlic
  • 1/2 cup of water
  • cherry tomatoes
  • 1 small red bell pepper
  • olive oil

Instructions

  1. Start by blending the tofu, spinach, garlic and the water together in a blender until the consistency is smooth. Add the mixture to a bowl.

  2. Chop up the tomatoes and bell pepper into tiny pieces and add it to the bowl with the tofu.

  3. Fill in your muffin containers with the mixture and put it in the oven for 30 minutes at 225C (435F).

  4. Eat as a healthy snack or bring them with you in your lunchbox.
