Let me introduce you to a new favorite of mine: date sweetened granola. I have been totally obsessed with this granola for the last week and I have been eating it (at least) once a day. For a long time have I been trying to find the perfect granola and last weekend I finally nailed the perfect recipe. I am not a fan of overly sweet granolas but at the same time, I still want a little bit of sweetness. Does that make sense? Anyways this was how I made it:
One thing that I love about granola is that you can customize however you like to make it fit your preference. This means that my recipe also is made easy to customize. You can choose all your favorite nuts and all your favorite seeds. I chose to use a mix of almonds, walnuts, and hazelnuts. For nuts, I chose to go with chia seeds, flax seeds, hemp seeds and pumpkin seeds. For seasoning I chose cinnamon but you can use cacao powder if you would like.
I started by blending the almonds alone for a little while until they were slightly powdery but there still as a few bigger pieces. I added the rest of the ingredients and blended them together. I used 1/2 cup water to get it mixed together but you might use a little more or a little less.
I added the mixture to a baking sheet and baked it on 85°C (185°F) for about an hour. I took it out a couple of times while baking and crushed it up. And then my granola was done!
