Vegan burrito with tofu filling

I know that I haven’t been posting as many recipes lately. That is because I have been trying to post more fashion but I just had to share this recipe! One of my favorite things to eat is burrito because it is so easy to make and you can make it with almost any ingredient that you have in your fridge. It is my go-to dish for when I am having friends over because it is so easy to customize so that everyone likes it. Here is the recipe for my favorite burrito filling:

I started by heating up a heating up a pan with olive oil and garlic. While the garlic was cooking I crumbled up the tofu and added to the pan as well.

For seasoning, I used chili flakes, cumin, and oregano which is the spices that I used to use on my meat when I wasn’t vegan but you can use the spices that you are comfortable with.

I made these tortillas using spinach but you can use anyone that you would like. Then all there was left to do was to fill the tortillas with the tofu filling and top it with some vegetables. I used tomatoes, cucumber, pepper, letters, and beans because that was what I had in my fridge but you can use whatever you want.

This tofu filled burrito is healthy and super easy to make. Great for a quick dinner or lunch. Can easily be costumized to your taste by adding your favorite spices and vegetables.

Ingredients

Tofu filling

  • 1 tsp olive oil
  • 2 clove of garlic
  • 1 package of tofu
  • 1 tbsp chili flakes
  • 1 tbsp cumin
  • 1 tsp oregano

Burrito

  • tortillas of choice vegan, whole wheat or gluten free
  • All your favorite vegetables

Instructions

  1. Start by making the tofu scramble:

    Heat a medium size pan over medium heat and add the olive oil when the pan is hot

  2. Chop up the garlic. Add the chopped garlic to the pan and let it cook for a few minutes.

  3. Crumble the tofu and let it cook with the garlic. The tofu should look a little like scrambled eggs.

  4. Add all the spices and let it cook for a few more minutes until the tofu starts to brown a little. Warm the tortillas.

  5. Serve the scrambled tofu in the warm tortillas. Top with all of your favorite vegetables.
