Curry apple fried rice

I know what you are thinking “fried rice with apple?” but the combination of apple and curry is actually really good. This recipe only require simple ingredients that you probably have already.

The creamy rice combined with the chevy nuts creates a delicious texture while the combination of the spicy curry and the sweet apples creates a delicious taste. This recipe is both healthy, filling and super delicious + it is vegan and oil-free.

Start by chopping up the vegetables and the apple. The apple is giving the dish some sweetness that goes well with the curry. I would recommend chopping them rough to give the dish some texture.

Next add the curry and a little bit of almond milk to a pan and let it simmer until the curry bubbles. You can also use olive oil instead of almond milk I just like to use almond milk because it makes the rice more creamy. You can also use coconut milk if you want the rice to be even creamier.

Add the vegetables, the apple and the rice to the pan and let it simmer for a couple of minutes. Chop up some almonds while the rest of the dish is simmering. Again would I recommend chopping them rough.

Add the almonds to the pan and let them simmer with the rice and vegetables for a couple of more minutes before serving.

This fried rice recipe is perfect for those days when you don´t have much times since it only takes 30 minutes to make and require ingredients that you probably already have and if you don´t you can always change out some of the vegetables with some that you have.

Kids as well as adults will love this dish!

Ingredients

  • 5 asparagus
  • 1 spring onion
  • 3 dl 1 cup chopped broccoli
  • 1 apple
  • 4 dl 1 1/2 cup brown rice
  • 3 tbs curry powder
  • 1 dl 1/2 cup almonds
  • A little bit of almond milk

Instructions

  1. Cook the rice as instructed on the package.

  2. Chop up the vegetables and the apple rough to give the dish some texture.

  3. Let the curry cook in a little bit of almond milk (you could also use olive oil) for a couple of minutes. Add in the vegetables, the apple and the rice.

  4. Chop up the almonds rough and add them to the dish. Let it simmer for a couple of minutes before serving.
