What I eat in a day

I have been seeing these types of videos everywhere  on youtube so I got inspired to make one for myself. But in a blog form. I always get inspired to try out new types of food after seeing these videos and I found it very useful when I had just turned vegan. This was what I ate today:

For breakfast I had some overnight oats with peanut butter, banana and cacao nibs. I like to eat fruits in the morning because it gives me a lot of energy to get me through the day. I know that some people don´t get that hungry in the morning and just want something light but I am not one of those people. I need something that can fill me up and oats is perfect for that.

For lunch I had a salad bowl with avocado, letters, mango, edamame beans, peanuts, carrots and goma dressing. I got the salad at a restaurant i Copenhagen called Gló. I know that it looks like a light salad but trust me it kept me full for the rest of the day.

When it was time for dinner I was still pretty full from my lunch so I just had some avocado toast. I chose rye bread as the bread for my toast and topped it of with avocado, tomatoes and a little bit of pepper.

 

I don´t eat dessert everyday but today I decided to have some of these delicious chocolate coconut bites. You can see the recipe here.

That was all that I ate today. I hope that it has inspired you to try some of these meals.
